Zucchini Cake w/ Chocolate glaze

My mom gave me a few bags of frozen zucchini from her garden.  Woot! Woot!
She tells me of this YUMMY recipe for a cake with a glaze.
OF Course I have to try it.

Boy am I glad we did.  It was gone in no time!





ZUCCHINI CAKE

1 c. oil
2 c. flour
3 eggs
2 c. zucchini
3 tsp vanilla
2 tsp baking soda
1 tsp salt
1/4 tsp backing powder
1 tbls cinnamon
1 1/2 c. sugar
1 c. raisens or chocolate chips (optional)

First Oil and flour your cake pan.  Preheat oven to 350'

Mix all the dry ingredents in one bowl.
*flour
*baking soda
*salt
*baking powder
*cinnamon
*sugar

Then add your oil - vanilla - zucchini (last)

Mix up real good.

Bake for approx. 35-40 minutes.  checking it after 25 min.  Mine only took 25 min.

This cake will not be a full fluffed up cake, but rather 1/2 the fluffness as a regular cake would be.
This is very moist though.. YUM.  THen for the glaze..

GLAZE..

Boil
1/2 stick butter
2 tbls cocoa
1/6 c. milk
2 c. powder sugar
1/2 tsp vanilla

add more milk if needed.

Boil it and then take off heat.  As soon as your cake is done.  drizzle this on top of it.  Keep in mind this is just a drizzle.  But i made plenty to cover the whole cake.
